Limoncello and Prosecco Cooler with iced Raspberries

After a long hard week, it is time to relax and unwind. Here’s a fantastic Champagne summer cocktail recipe from halfwine.com to help you do just that.

Ingredients


Fresh raspberries (approximately 3 per cocktail)
A couple of sprigs of mint
100ml cold Prosecco
50ml Limoncello liqueur, cold (put in the freezer; it doesn’t freeze because of the alcohol content)

Preparation

  • Put the raspberries on a plate; separated from each other and place in the freezer at least 15 minutes before serving time along with glasses.
  • Gently ‘smush’ a couple of small mint leaves and add to each glass along with 3-4 of the frozen raspberries.
  • Add Limoncello, then the sparkling wine.
