Keeping with the BBQ theme from the Bank Holiday, Recipe of the day is Wild Alaska salmon and halloumi BBQ skewers with garlic and lime-herb dressing.
Like most salmon recipes, it is high in protein – a 4 oz serving provides a full day’s requirement of vitamin D. Salmon also has an abundance of vitamins and minerals, as well as anti-oxidants and omega-3 fatty acids.
Fact: Eating salmon at least twice a week can reduce the risk and severity of several health conditions. It improves cardiovascular function as well as metabolism and builds healthy tissue. The protein found in salmon also builds and repairs cells, tissue and muscles throughout the body.
This salmon recipe serves 4
Salmon Recipe Ingredients
400g Alaska salmon fillet, skinned and cubed into 12 portions
200g halloumi cheese, sliced into 12
1 green pepper, sliced into 8
Zest and juice of 2 limes
2 cloves garlic, crushed
2 tbsp finely chopped mint
2 tbsp finely chopped oregano
2 tbsp finely chopped coriander
4tbsp olive oil
- Mix together all the ingredients for the marinade and reserve half for a dressing.
- Use the other half to marinade the salmon, halloumi and green pepper. Cover and leave in the fridge for at least an hour.
- Thread cubes of marinated salmon, halloumi and pepper onto 4 skewers and cook for 4-5 minutes on the bbq or hot griddle, turning halfway, until the salmon is cooked.
- Serve with plenty of the remaining garlic and lime-herb dressing.
