Recipe: HUMMUS AND ROASTED VEGGIES

This one will be a hit with vegetarians. Hummus contains chick peas which are a vegetarian source of protein and healthy fats.

This recipe serves 3

Ingredients

1 courgette, cut lengthwise into 1/4″ slices
1/2 a medium aubergine, cut into 1/4″ slices
1/2 a sweet onion, cut into 1/4″ rings
olive oil, salt, and pepper
6 slices of LivLife bread
1 tub of hummus
spring mix of lettuces

Method

  • Preheat the oven to 200 c
  • Toss the courgette, aubergine, and onion in enough olive oil to coat them, and then season with a little salt and pepper.
  • Spread the veggies onto a cookie sheet, and bake for 20 minutes, stirring halfway through cooking, so they brown evenly.
  • While the veggies roast, spread your hummus onto your slices of bread and pile a bit of lettuce onto the bread slices. When the veggies finish up, divide them between the three sandwiches, close ‘em up, slice in half, and enjoy!
