Method

  1. Roast the Tomatoes: Preheat the oven to 220°C/200°C fan/gas mark 7. Toss the halved tomatoes with olive oil, balsamic vinegar, and salt, then arrange cut-side up on a lined baking tray. Roast for 20–25 minutes until soft and slightly caramelised.
  2. Prepare the Base: Heat olive oil in a frying pan and gently cook the onion and garlic for about 5 minutes until softened. Meanwhile, combine the stock and passata in a saucepan and bring to a gentle simmer.
  3. Cook the Risotto: Add the rice and tomato purée to the onions, stirring for 2 minutes. Gradually ladle in the stock mixture, stirring constantly. Allow each addition to be absorbed before adding more. Continue until the rice is creamy and tender but still has a slight bite.
  4. Finish and Serve: Remove the pan from the heat and stir in butter, half the Parmesan, and the roasted tomatoes. Spoon the risotto into warm bowls, top with the remaining Parmesan, and garnish with fresh basil leaves.
