A few weeks ago I attended a Parma Ham cooking event to learn new and innovative ways to use Parma Ham in cooking. This Parma Ham and Pear rolls with rocket and Parmesan is one of the recipes I tried. It’s really easy to make, delicious and will be perfect as a Christmas canape. This recipe makes 20 rolls.
Ingredients
1 ripe but firm pear, cored, halved and thinly sliced
1 tsp lemon juice
½ tsp salt and pepper
2 large handfuls of rocket
20 small slices of Parma Ham, cut in half
30g Parmesan, grated
2 tbsp good quality balsamic vinegar
Method
- In a medium-sized bowl, toss the pears in the lemon juice with a little salt and pepper.
- Place 1 pear slice and a few sprigs of rocket on 1 slice of Parma ham. Top with a little Parmesan, drizzle with balsamic vinegar, and rollup.
- Cut the roll in half for a smaller bite. Repeat with the remaining rolls and place seam side down on a serving plate.
Tip: The rolls can be made up to 4 hours in advance and chilled.
