Recipe of the day is this fantastic Horseradish Cornish New Potato Salad with Cornish Devilled Mackerel which serves 4. This potato salad recipe is not just easy to make but has fantastic health benefits as well.
The mackerel contains protein, the antioxidant Coenzyme Q10 which helps prevent certain cancers and has several health benefits such as heart health, making the blood clean and fresh. Mackerel is also rich in protein,Omega-3 fatty acids and other minerals such as calcium, phosphorous, potassium, selenium and magnesium to name a few.
Potatoes also have some excellent health benefits like provide the body with an essential source of fuel and energy which help to fuel all reactions in the body for movement, thinking, digestion and cellular renewal.
This potato salad recipe has a prep time of 20 minutes and cooking time of 10 minutes.
INGREDIENTS
4 whole mackerels, scaled and gutted
100g butter, softened to room temperature
1 tsp cayenne pepper
2 tsp sweet smoked paprika
1 tbsp golden caster sugar
½ tsp of English mustard
A few drops of Tabasco
2 tsp red wine vinegar
Sea salt and freshly ground black pepper
For the horseradish Cornish New Potatoes
500g new potatoes
Sea salt and freshly ground black pepper
2 shallots, finely chopped
2 tbsp crème fraiche
2 tbsp horseradish cream
1 bunch of chives, finely chopped
Olive oil
METHOD
- Cook the potatoes in salted water for 10-12 minutes then drain into a large bowl and cool slightly.
- Once cool, cut the potatoes in quarters and then put into a mixing bowl. Stir in the shallots, crème fraiche and horseradish cream and season to taste with salt and pepper then mix in the chives. Set aside to serve warm or at room temperature.
- Heat the grill to the highest setting. Slash each mackerel 3 times on each side and place on a baking dish. Mix all the remaining ingredients together in a bowl to form a thick, spiced butter and season well with salt and pepper. Rub the butter all over the mackerel, including inside the cavity then grill the mackerel for 4-5 minutes on each side until it is just firm and cooked through.
- Serve immediately with the Cornish New potatoes and some fresh peppery watercress to garnish.
