Turkey Breast in Prosciutto di Parma with Sautéed Brussels Sprouts

  • 800 g turkey breast

Preparation

  1. Season and Wrap the Turkey Breast
  • Start by seasoning the turkey breast with salt and pepper to taste.
  • Wrap the turkey breast in slices of Prosciutto di Parma, ensuring it’s fully covered.
  • Brush the wrapped turkey breast with olive oil to add a nice, golden crust.

2. Bake the Turkey

  • Preheat your oven to 180 °C.
  • Place the wrapped turkey breast on a baking tray and bake until the core temperature reaches 65 °C. This should take approximately 25-30 minutes.
  • Let the turkey rest for 10 minutes before carving it into slices. This step is crucial for retaining the juices and ensuring a tender texture.

3. Prepare the Brussels Sprouts

  • Cut the Brussels sprouts in half.
  • Boil them in lightly salted water until they start to become tender, which should take about 5-7 minutes.
  • Drain the water and sauté the Brussels sprouts in 1 tablespoon of butter in a frying pan until they are nicely browned.
  • Mix in the remaining 3 tablespoons of butter before serving to add richness and flavour.

4. Cook the Almond Potatoes

  • Boil the almond potatoes in lightly salted water until they are tender, usually around 15-20 minutes.
  • Once cooked, drain the water and set the potatoes aside.
